Thanksgiving is a holiday full of food. People drool over the turkey, waiting for hours fo the perfect temperature. Everyone else brings side dishes that get their time in the spotlight. There’s cranberry sauce, bacon-wrapped asparagus, stuffing, and sweet potato pie. Everyone eats more than they should, falls asleep on the couch, and dreams of eating Thanksgiving leftovers—foods they might not see for another year.

At least that’s how it used to be, especially with sweet potato pie. But things have changed in recent years. Sweet potatoes are readily found in grocery stores all year round now. And it’s no surprise after tons of research has shown how much of a punch they pack

You see, they’re chock full of vitamins, for one.

Sweet potatoes are high in vitamin B6, Vitamin C, and vitamin D.

B6 is one of the b-suite vitamins and is linked to heart health. Vitamin C is the number one vitamin people reach for when they get sick. It’s also essential for making bones denser, improving digestion, and producing collagen. Collagen is great for tightening skin and giving it a more elastic, youthful appearance.

Vitamin D normally is supplied to the body through the sun, but during the winter months, often our bodies don’t get enough of it. It’s essential to give us a feeling of levity as it wards off depression.

Sweet potatoes are also high in iron. Iron is not only good for helping the body process vitamins for energy, but it is a leader in having healthy blood. Blood cells need to have appropriate levels of iron for clotting and without it, wounds will bleed longer. So pass the casserole.

Not only are sweet potatoes high in vitamins and iron, they’re chock full of other minerals too like magnesium. Healthy magnesium levels promote relaxation, restful sleep, and softer, less tense muscles. As anyone can tell you, sleep is essential to healing the body of multiple dis-eases and our bodies don’t function well without it.

These orange guys also have more potassium than a banana. Potassium regulates heart beat and nerve function. An absence of healthy levels of potassium could lead to the body not being able to reduce swelling, kidney failure, or poor muscle contraction.

And just when you thought it couldn’t get any better, sweet potatoes don’t spike blood sugar when you eat them. Spikes in blood sugar lead to headaches, fatigue, and weight gain. If you spike your blood sugar often enough, you could also induce your body to become diabetic.

All in all, these roots are power foods and should be incorporated into your diet throughout the week. This could look like baked sweet potatoes, sweet potato “fries, or even sweet potato mash with broccoli and egg for breakfast. It’s super versatile and it lasts a long time, so stock up and give your body some fortified nutrition.
